What are we learning? This week we finishing our unit on knives & Smallwares and beginning our unit on food safety. Why are we learning it? We are learning these things because they will help us be successful not only at home when we cook, but also if we choose to make a career out of our culinary skills. How will we know we learned it? We will know that we learned it when we can perform knife cuts that are the approximate size that they should be during a skills lab as well as practice safe food and kitchen safety practices while in the kitchen during labs. We are learning these things because knife cuts are an important part of the Prostart curriculum and a skill that is necessary if students want to pursue a career in the restaurant industry. How will I know I learned it? You will know you learned it when you are able to complete each knife cut on your own within the precise measurements given for each cut.
